Cascade Brewing Blackcap Raspberry (2015 Project) Lambic – Fruit at 7.63% ABV (C$30.20 at Willow Park Wine & Spirits, 750 ml, no bottle date or best before, acquired 11-Dec-2015, reviewed 21-Jun-2016)
Appearance: hazy deep purple, brief fizzy head diminishing immediately to nothing, no lacing. (3/5) Aroma: intense raspberry, oak, vinegar. (8/10) Taste: high tart, low sweet, low bitter. (8/10) Medium-light body, lively sustained carbonation, dry tart finish. (4/5)
Wow… this stuff is like the Platonic ideal of raspberry, unencumbered by sweetness or other such frippery. Intensely, almost brutally tart, with a bone dry finish. I would’ve said it’s right up there with the true Belgian lambics, if there were some more funk. There is a little, but it’s faint and pretty much entirely in the finish, after the dry and tart finish fades. Damn pricey, but damn nice. (16/20)
